Homemade Pierogi are EASY! Pierogi Recipe | J-Mac (2018)
We're making homemade potato and cheese pierogi in J-Mac's Amateur Kitchen today and guess what! They're super easy and we'll show you how to make them in the video (Duhh). Along with a little bit of Polish sprinkled throughout by our rarely seen camera girl you'll swear you're in Poland. What more could you ask for? A better video? Oh well yeah that would be a good one but for now, how about just a pierogi recipe? Check it out below!
Pierogi Recipe
Pierogi Dough:
2 Cups All Purpose Flour
1/2 Cup Sour Cream
4 Tbs Unsalted Butter (Room Temp)
1 Large Egg
1/2 Tsp Salt
Pierogi Filling:
1 Cup Mashed Potatoes (1 Large or 2 Small Baking Potatoes)
1 Cup Polish White/Farmers Cheese (You can use shredded sharp cheddar as well)
1/2 Finely Diced Yellow Onion
1 Tbs Cream Cheese (Heaping tablespoon)
1 Tsp Salt
1 Tsp Black Pepper
Bacon (Optional)
Instructions:
Cut potato into 2 inch pieces.
Place in salted boiling water and cook until tender (About 15 minutes)
Drain potatoes
Finely dice half of a medium sized yellow onion
Cook on medium low eat until translucent (About 5-7 minutes)
Mash together potatoes, onions, cheese, cream cheese, salt & pepper
Cover and refrigerate for at least 30 minutes
Combine dough ingredients and stir until you get a clumpy consistency.
Squeeze the dough together with your hands until you form a ball.
Knead dough on a clean surface until you reach a smooth texture (about 5 minutes of kneading, woohoo)
No dough rest time needed
Lightly flour clean surface and roll out dough to 1/8 - 1/16 in
Press a 3 inch wide glass into the dough to form circles
Repeat these two steps until all dough is cut into 3 inch circles
Place just under a tablespoon of filling in each circle
Fold the dough around the filling and pinch the sides together
You can choose to freeze or cook the pierogi at this point.
Place pierogi in salted boiling water
Cook until they float to the top (About 3 minutes)
Drain and pan fry with butter or bacon until golden brown
Enjoy!
