Cooking Solo in the Valley | Double Header BBQ Recap (RGC + 1st Brisket!)

Took the rig down to the Rio Grande Valley for a double-header weekend — two comps, back-to-back days, one-man team. First stop: Edinburg, TX where I walked away with 10th chicken, 6th ribs, 2nd brisket, and Reserve Grand Champion. Then rolled into San Benito for day two with zero sleep and even less prep… and somehow still pulled off 2nd chicken, 13th ribs, 10th pork, and 1st brisket.

Plenty of laughs, lessons, and local support. This one reminded me why I love what I do — even when I’m dead tired and chasing water tanks.
