Soup Recipe:
1 head of Broccoli
1 White Onion
2 Garlic Cloves
2 cups Frozen Peas
Small Bunch Fresh Basil
1 tsp Coconut Oil
1 tbsp Apple Cider Vinegar
1 litre Vegetable Stock
200g Tofu
Salt and Pepper
Sprinkle Chilli Flakes
1. Fry off the chopped onion and garlic in the coconut oil for 5 minutes.
2. Add a drop of water to cover the bottom of the pan and add the broccoli. Continue to fry for a further couple of minutes. Season well with salt and pepper.
3. Pour in the remaining vegetable stock with the apple cider vinegar, chopped basil and frozen peas. Cover with a lid and simmer for 15 minutes.
4. Blend everything together, including the tofu, until totally smooth. Serve in bowls with a sprinkle of chilli flakes on the top and a fresh basil leaf.
