What are Mexican Fiestas Patrias?
Fiestas Patrias are the celebrations that take place throughout Mexico to celebrate its independence from the viceregal authority of Spain (Seven Central and Southern Latin American nations also celebrate Independence in September). The Emancipation Proclamation was also written on September 22nd)

When do the national Fiestas Patrias begin?
The festivities are held throughout September (patriotic month). The main celebration begins on the night of September 15, politicians and personalities with the people meet in the Zócalo (in Mexico City), where the president rings the bell that Miguel Hidalgo, the Father of the Homeland, rang to later give el Grito (Patriotic Cheer) of Dolores. There are many versions of the Grito and it is normal for presidents to add a special part.

Traditions
The streets are adorned with the beautiful colors of the national flag. A re-creation of the Grito de Dolores (Patriotic Cheer) and the intonation of the National Anthem begins what is called the Fiesta del Grito, in which memorable shows reign with fireworks, to celebrate our independence and that the national holidays have officially begun. This commemorates Padre Miguel Hildalgo call for independence- and lasts through the night. This happens in the capital of the country, and each regional municipal and in festivals in the United States. This follows the traditional heritage and meet in its main squares to start the festivities.

Fiestas Patrias participants show their patriotic pride and happiness. They are prepared with flags, hats, food, and traditional music. Along the streets are placed dozens of stalls dedicated to selling traditional dishes of the most vibrant flavors, among which tacos, tamales, pozole, toast and the favorite dish of the majority, chiles en nogada, whose preparation consists of poblano chile stuffed with pork mince and covered with walnut sauce.

This is the most representative food of the national holidays, since it has all the colors of the flag because the chili is green, the white sauce and the seeds are red, the perfect food to commemorate the Independence of Mexico. Viva Mexico!
