Steamed chicken feet with black bean
1kg chicken feet
1 stalk spring onion
1 medium size piece of ginger
1 tablespoon dark soy sauce
5 or 6 star aniseeds
Some black bean
Fresh chilli
Condiments
10g salt
10 MSG
15g sugar
30 potato starch
1 tablespoon oyster sauce
1 tablespoon hoi sin sauce
1 tablespoon peanut butter
1 tablespoon chilli oil
2 tablespoon garlic oil
Dashes of wine
Dashes of pepper powder
Method
Cut the sharp part from the chicken claws and add 1 tablespoon dark soy sauce. Mix thoroughly and deep fried in hot oil (190C) for about 2 minutes.
Boil the chicken claws with ginger, spring onion and star aniseed for 45-50 minutes.
Drain and soak in cold water to cool down.
Split the chicken feet in two and marinate with condiments.
Put chicken feet in a dim sum saucer or large plate and add some black bean and some chilli on top.
Steam over high heat for 5 minutes to complete
