Harvesting and Curing Sweet Potatoes

Like with most produce, growing your own sweet potatoes gives a gardener access to a panoply of tastes far beyond those found in the supermarket. Harvesting them in early fall always feels like an off-season Easter egg hunt, their bright colors emerging magically from the soil bring smiles to the faces of all who participate in the dig. The thrill of finding the hidden bounty in each bed is heightened, however, when one realizes that, unlike most garden produce, these beauties will last all winter if cured correctly—making self-sufficiency a real and delicious possibility.
Timing the harvest, digging the sweet potatoes, and curing them are easy. All that is needed is a little know-how and, at times, a careful touch. Watch this short video to learn when and how to harvest and how to cure these culinary delights.
About us: It's been a busy year so far in the garden. Early this spring, we created 13 experimental beds to compare several "till" and "no-till" methods. As the season's progressed, we've weighed and measured all of the produce from each bed and have seen outstanding growth in some and disappointing growth in others. We've also expanded our cover crop palette to include perennial alfalfa in an effort to grow more of our own fertility. All of these efforts and results perfectly illustrate the main concepts from the book Judd is finishing. We can’t wait to show you all of it and have videos coming on all of those topics!
