How To Make and Can Spaghetti Sauce | Spaghetti Sauce Recipe

Spaghetti Sauce
15 pounds ripe tomatoes
1 TBSP fresh basil (dried will work)
1 TBSP oregano
1 1/2 TBSP parsley
8 cloves of minced garlic
1 small onion diced

Wash and remove bad spots from tomatoes. Cook on stove until they reduce in size and pan is filled with liquid. Run tomatoes through a food mill remembering to scrape the bottom occasionally. Place the tomato juice in a large saucepan and cook until it is reduced by half. Add in basil, oregano, parsley, garlic, and onion and simmer for an additional 30 minutes.
Prepare your jars by heating them in a hot water bath. Prepare your water bath canner by heating 5 inches of water in the bottom of the pan. Fill your jars to the bottom rim of the jar and run a paper towel around the top rim place on flat and ring just until ring is fingertip tight. Pace jars in water bath canner and fill canner 1-1/2 inches above the jars. Bring water to a boil and process jars for 45 minutes. After 45 minutes turn off canner and remove lid wait 5 minutes then you can remove the jars to cool and seal on a towel for 24 hours. After 24 hours if any of the jars have not sealed pace them in the refrigerator and use within 1 week.
