Making Chicken Empanadas in Costa Rica

FULL RECIPE
Empanadas: will give you 10 empanadas weighing 100 grams each.
DOUGH
500 grams (17oz) white all-purpose flour
8 grams (1 1/2 tsp) salt
35 grams grease/lard
225 grams (Two 4oz sticks) unsalted Butter
2 eggs (100g total)
75 ml (g) 2 1/2 oz Milk
Mix 5-10 minutes. Separate into 100 gram balls and let rest 15 minutes
CHICKEN
2 bone in Chicken Breast or Thighs
1/2 onion, chopped
3 cloves garlic, crushed
1 stalk celery w/leaves, chopped
1/2 bell pepper, chopped
5 sprigs thyme
3 bay leaves
Dried Oregano
Culantro Coyote (or Cilantro)
Boil 15 minutes, remove chicken strain broth and reserve
FILLING
1/2 Bell Pepper, diced
3 cloves garlic, minced
1/2 onion, diced
1-2 carrots peeled and grated
Olive Oil
1 10g packet Chicken Bouillon
Black pepper and Salt to taste
Lightly oil pot and place all vegetables in going for 3-5 minutes. Add broth reserve and reduce by half. Add shredded chicken and reduce. Remove and set aside to cool
Form empanadas like shown in video rolling into 6-8" circle
Brush formed empanadas with egg wash, sprinkle sesame seeds on, poke twice with fork.
BAKE
Bake at 350 F or 170 C for 20 minutes
Turn oven to Broil and bake 3-4 minutes until golden brown color appears
