What happens when Eggplant Parmigiana meets Grilled Cheese ?

What happens when I combine classic eggplant parmigiana with a grilled cheese sandwich? The results are absolutely delicious, messy and crunchy in equal measure. I show you why Sicilian eggplant are the perfect choice and why you will need a full body bib to enjoy it.

Eggplant Parmigiana grilled cheese sandwich

2 Sicilian eggplant, sliced into ½ “ ( 1 cm ) rounds or baby Italian, lengthwise
Kosher salt and freshly cracked black pepper, to taste
Parmigiano Reggiano cheese shaved into thin slices with peeler
Olive oil, for frying eggplant
125 gm fresh buffalo mozzarella, torn into pieces
10 Cherry or grape tomatoes gently fried in olive oil
Oregano to taste
1 handful basil, torn
1 roasted red pepper, optional, cut into strips
4 large slices crusty Italian style bread , Calabrese or Ciabatta

Place sliced eggplant into a colander and sprinkle lightly with kosher salt. Let stand 30 minutes , or until juices start to run. Rinse clean and pat completely dry. Lay on paper towels.

Heat olive oil in medium frying pan until it fully covers bottom and 1/2 inch up the sides. Over medium -high setting. When olive oil is heated, add eggplant slices in batches. Fry eggplant for 3 to 4 minutes per side, or until golden brown on both sides, adding more oil as needed. Drain on paper towels.

Wipe pan clean and add a splash more oil. Return to heat and add 1 whole garlic clove. Over medium heat blister the tomatoes for about 2-3 minutes but before they open up. Remove and transfer to a bowl.

Return pan to heat and add a bit more olive oil and reduce heat to medium low. Making 1 sandwich at a time, lay first slice of bread into pan. Arrange parmigiano slices to cover the bread. Add 1/2 the fried eggplant arrange 1/2 the blistered tomatoes and sprinkle with oregano. Tear 1/2 the mozzarella and top with roasted pepper and basil. Top with parmigiano and slice of bread. Drizzle with a bit more olive oil and pour a little around pan if dry.

Fry sandwich on low setting for about 4-5 minutes or until dark brown and toasted on bottom. Carefully flip sandwich away from you holding the top to prevent it from falling apart. Repeat on the other side until golden brown.

Cut in half and serve immediately. Repeat with second sandwich.
