INGREDIENTS

Chicken Shawarma
• 3-4 lb boneless skinless chicken thighs
• 2 tbsp olive oil
• 2 tbsp garlic paste or 4-6 cloves garlic smashed

• 1 tbsp ground coriander
• 2 tsp smoked paprika
• 1 tsp turmeric
• 1 tsp ground cinnamon
• 1 tsp ground ginger
• ½ tsp ground cardamom
• ¼ tsp cayenne pepper
• juice from 1 lemon
• 2/3 cup whole milk Greek yogurt

Garlic Yogurt Sauce
• 1 ½ cups fat free Greek yogurt
• 2 tbsp garlic paste
• 2 tbsp extra virgin olive oil
• juice from 1 lemon
• pinch of salt

Tomato Cucumber Salad
• 3-4 Persian cucumbers, peeled and sliced
• 3-4 tomatoes, seeds removed and diced
• ¼ red onion, thinly sliced
• 1 tsp Italian seasoning
• 2 tbsp extra virgin olive oil
• 2 tbsp red wine vinegar
• salt & pepper, to taste

Yellow Rice
• 1 cup dried basmati rice
• 2 cups chicken broth
• 1 tsp turmeric
• 1 tsp chicken bouillon powder
• 1 tsp olive oil
• 1/2 tsp white wine vinegar
