Making No Bake Cookies and a chat with me on St. Patty's Day

28 years ago, on March 17th, I gave birth to my oldest son Daniel. My Aunt Jackie brought No Bake Cookies with green sprinkles in honor of the holiday and thus a tradition was started.
I am sharing one of the many ways that they can be made and also my methods for making Corned Beef and Cabbage. I am also including in the recipe substitution to make the cookies sugar free, gluten free, nut free, or vegan.

No Bake Cookies Recipe
1/2 cup butter (vegan butter, margarine)
1/2 cup milk (nut milk, oat milk, soy milk)
1 3/4 cup white sugar (turbinado sugar, stevia, or 1/3 -1/2 cup maple syrup)
1/3 cup unsweetened cocoa
2/3 cup peanut butter (sunflower butter)
1 tsp vanilla
3 cups quick oats (gluten free oats)
