Exotic Green Pulav with Curry Recipe

Ingredients for Exotic Green Pulav:
• Basmati Rice – 1 Cup
• Cashew Nuts – 15 pieces
• Butter + Ghee – 2 tbsp
• Cinnamon Stick – 1
• Black Cardamom – 1
• Green Cardamom – 2
• Salt – As per taste
• Mixed Vegetables – 1½ Cups (Broccoli, Carrot, Zucchini, Corn, Baby Corn, Beans, Paneer)

For the Green Paste:
• Coriander Leaves – 1 cup
• Mint Leaves – 2 tbsp
• Onion – 1 large
• Green Chilies – 3
• Cumin Seeds – 1 tsp
• Black Peppercorns – 4
• Curd (Yogurt) – 2 tbsp
• Salt – to taste
• Ice Cubes – 2

Method for Exotic Green Pulav:
1. Prepare the Green Paste:
In a blender, add coriander leaves, mint leaves, cumin seeds, black peppercorns, ice cubes, green chilies, curd and salt. Grind them together into a fine paste. Set aside.
2. Prepare the Pulav:
• Wash and soak the rice for 30 minutes.
• In a pressure cooker, heat butter and ghee. Add cashew nuts and fry until golden brown.
• Add bay leaves, cinnamon stick, both cardamoms, and sauté for a minute.
• Stir in the prepared green paste and sauté for another minute.
• Add the diced mixed vegetables, followed by the soaked rice.
• For 1 cup of rice, add 4½ cups of water. Adjust salt to taste.
• Close the cooker and pressure cook for 3 whistles. After 3 whistles, reduce the heat and cook on low for an additional 30 seconds.
• Turn off the heat and let the cooker cool down naturally.
3. Serve the Pulav:
Your Exotic Green Pulav is ready! Serve it hot with curry and crispy papad.

Ingredients for the Curry:
• Curd (Yogurt) – 1 cup
• Water – 1 cup
• Besan (Gram Flour) – 1 tbsp
• Ghee – 1 tbsp
• Hing (Asafoetida) – 1/4 tsp
• Bay Leaves – 1
• Cinnamon Stick – 1
• Cloves – 2 pieces
• Cumin Seeds – 1 tsp
• Jaggery – 1 tbsp
• Salt – to taste
• Coriander Leaves – 1 tbsp (chopped)

Method for Curry:
1. In a bowl, whisk together curd, water, besan, hing, and salt. Set aside.
2. Heat ghee in a pan, add cumin seeds, bay leaves, cinnamon stick, cloves, and chopped coriander leaves. Sauté for a minute.
3. Add the curd mixture to the pan and bring it to a gentle boil, stirring continuously.
4. Add jaggery and adjust the salt and consistency by adding more water if needed.
5. Let it boil for 3-5 minutes, stirring occasionally. Your flavorful curry is ready!
