Vlog #32 Christmas baking, fresh fruit and random projects
this week we are prepping and getting ready for things that usually happen closer to Christmas. the salmon was cut for smoked salmon, we also got ready to make winter sausage on monday.
I also had projects that I wanted to get done and out of the way before my next bake week which actually is next week. but, of course we also had to make Christmas cookies which I opted for gingerbread man.

Gingerbread recipe:
1 1/2 cups gluten free flour
3/4 tsp anthem gum (omit if your blend has it)
4 tbsp cornstarch
3/4 tsp baking soda
1 1/2 tsp cinnamon
1 tsp ginger
1/4 tsp salt
1/4 cup sugar
1/3 cup brown sugar
3 tbsp molasses
2 tbsp honey
1/2 tsp vanilla
5 tbsp butter
1 egg
whisk together first 8 ingredients, add the rest of the ingredients one at a time whisking after each addition. the dough will be thick and smooth.
roll dough 3/4 inch think and make your shapes.
bake at 325C for 12- 15 minutes till firm to the touch.
turnover dough:
130 g gluten free flour
20 grams cornmeal
1 1/2 tbsp sugar
1/2 tsp salt
7 tbsp cold butter
1 tbsp greek yogurt
2-3 tbsp ice water
add first 4 ingredients blend, add butter and pulse about 10 times, add the rest of the ingredients and blend till it just starts to come together. refrigerate for 1 hour before making the turnovers.
