Welcome back to What’s For Tea. Today I made chicken parmesan! Also known as Chicken parmigiana or chicken Parm :) Absolutely delicious and so easy to make!

I’ve listed everything I used below…in case you want to give it a go for yourself.

FOR THE CHICKEN
70g / 2.5 oz Panko breadcrumbs
1 Teaspoon garlic powder
25g / 0.9 oz Grated Parmesan
2 Medium eggs, beaten with 1 tablespoon of water
100g / 3.5 oz Plain flour
Up to 700g / 24 oz Boneless skinless chicken
Salt & pepper to taste
Vegetable oil for frying
100g Grated mozzarella

FOR THE SAUCE
2 Tablespoons extra-virgin olive oil
1 Small onion, finely chopped
2-3 Cloves garlic, sliced
600g / 21 oz Passata or tinned chopped tomatoes
Salt & Pepper to taste
Pinch of crushed chilli flakes 
2 Tablespoons of freshly chopped basil or parsley
