recipe for South Indian style curry leaves powder:

Ingredients:

2 cups fresh curry leaves
1/2 cup urad dal
1/4 cup chana dal
1/4 cup whole coriander seeds
1 tbsp cumin seeds
6-8 dried red chilies
1/4 tsp asafoetida (hing)
1 tbsp oil
Salt to taste
Instructions:

Wash the curry leaves and spread them out on a clean kitchen towel to air-dry for a few hours, or until completely dry and brittle.
In a pan, heat 1 tablespoon of oil over medium heat. Add the urad dal and chana dal, and roast until they turn golden brown.
Add coriander seeds, cumin seeds, and dried red chilies to the pan and roast until the spices are fragrant.
Add the dried curry leaves and sauté for a few minutes, or until the leaves turn crispy.
Turn off the heat and let the mixture cool down to room temperature.
Once cooled, transfer the mixture to a blender or food processor, add the asafoetida, and grind the mixture to a fine powder.
Add salt to taste and mix well.
Store the curry leaves powder in an airtight container in a cool, dry place.
This South Indian-style curry leaves powder can be used as a seasoning for various dishes, such as rice, idli, dosa, and more. Enjoy!
