Making a spicy spinach omelette - A quick recipe passed one from my son-in-law's dad (Uncle Roy)

Hi all
Today we have a quick and easy recipe for you, suggested by my son in law's dad, Uncle Roy. I have an abundant supply of spinach in my garden and I am always looking for new recipes to do with the harvest. Uncle Roy suggested we make spinach and eggs, similar to the way we make methi and eggs. Spinach is not as strong a herb as methi and therefore this recipe could therefore be a good one to try if you find methi and eggs overpowering.

Ingredients
300g spinach herbs, cleaned, washed and sliced
4 large eggs
1/4 cup oil
1 onion, grated
3 dried chillies
1 tsp rough salt
3 large cloves of garlic, sliced
sprinkle of paprika
2 small tomatoes, grated

Serve hot with toasted bread or soft rotis
