Scape Pesto - 2021

Recipe*:
Garlic Scapes - 2 cups, chopped
Lemon Balm - 1 cup leaves, well packed
Catnip - 1 cup leaves, well packed
Ginger - 3 TBL, finely grated
Olive Oil - 1 cup
Sumac - 1 heaping TBL, steeped in 1/2 cup boiling water for at least 10 minutes (strain before adding to food processor along with other ingredients)
Salt - 1 1/4 tsp.
Black Walnuts - 3/4 cup, shelled, toasted and chopped
Add all ingredients to food processor except oil, then slowly drizzle in oil until you have a cohesive paste.
* Swap out ingredients you don't have around for others with similar properties you do have around as you see fit:)
