In this wholesome thali, I have prepared:

🍚 Steamed Rice
🌼 Yellow Moong Dal (Light & Nourishing)
🥣 Gujarati Kadhi (Yogurt & Gram Flour Curry)
🥔 Aloo Cabbage Sabzi (Dry Potato-Cabbage Curry)
🍮 Rice Kheer (Creamy Sweet Rice Pudding)
🍽️ Crispy Puris (Whole Wheat Fried Bread)

👩‍🍳 Bonus Item – Homemade Puris:
Wheat flour is kneaded with a pinch of salt and a little oil to form a soft dough. After resting, the dough is divided into small balls, rolled into discs, and deep-fried in hot peanut oil until puffed and golden. These puris are the perfect match for kadhi, dal, or sabzi.

Wheat flour, rice, yellow moong dal

Yogurt, gram flour (besan), jaggery

[Scene 1: Almonds in microwave]
Soak 25 almonds in hot water
Microwave for 1 minute

[Scene 2: Rice prep for kheer or kadhi]
Wash 1 cup rice and soak it

[Scene 3: Moong dal soaking]
Wash & soak 1 cup yellow moong dal

[Scene 4: Yogurt mix for kadhi]
In a bowl, add:
2 cups yogurt + 2 tbsp gram flour (besan)
Whisk well until smooth

[Scene 5: Kadhi base]
Add 2 glasses water + salt to taste
Add 1 tbsp jaggery + grated ginger

[Scene 6: Boil kadhi]
Cook on low flame
Stir continuously for 10 mins
Boil for 5 mins & keep aside

[Scene 7: Rice in Instant Pot]
Add 1 cup soaked rice + 1 glass water
Set to “Rice” mode in Instant Pot

[Scene 8: Potato-Cabbage sabzi]
Heat 4 tbsp peanut oil in wok
Add cumin seeds + 2 chopped potatoes
Sauté till golden

[Scene 9: Add tomatoes & spices]
Add chopped tomatoes + green chilies
Add turmeric, red chili, coriander powder, salt, & sugar

[Scene 10: Add cabbage & cook]
Add finely chopped cabbage
Mix well, cover & cook for 3 mins
Add coriander & cook uncovered

[Scene 11: Boil rice on stovetop (optional)]
Boil water with salt
Add soaked rice & cook for 10 mins
Strain water & cover rice

[Scene 12: Cook moong dal in cooker]
In cooker, add 4 tbsp oil + cumin seeds
Add soaked dal + 1 cup water
Add salt, turmeric, chili, coriander powder
Close lid & cook for 1 whistle

[Scene 13: Kadhi tempering]
In small wok, heat 1 tbsp ghee
Add cumin seeds, green chili, coriander, curry leaves, & whole red chili
Pour over kadhi

[Scene 14: Make puri]
Knead dough with wheat flour, salt & oil
Rest dough, then roll small puris
Deep fry in hot peanut oil till puffed & golden

[Scene 15: Make kheer in Instant Pot]
Open rice from Instant Pot
Add 1 litre milk + 1 cup sugar
Add cardamom, nutmeg, saffron
Steam mode for 10 mins

[Scene 16: Garnish kheer]
Peel soaked almonds & slice
Fry almonds, cashews, pistachios in ghee
Garnish on top of kheer

[Final scene: Serve Thali]
Satvik Thali is ready to serve
Puri – Kadhi – Dal – Sabzi – Rice – Kheer
