Kapampangan Beef Caldereta

BEEF CALDERETA recipe

3 lbs cubed beef chuck roast OR Boneless beef fingers or Beef Ribs
3-4 cups pineapple juice
1-2 cups water
2 Tbsp soysauce
1 Tbsp ground black pepper

—MIX ALL INGREDIENTS ABOVE AND BOIL TILL TENDER. This will take about 1.5-2 hours in total. If liquid evaporates just gradually add water-just enough to cover beef, not too much.

Pan fry:
1 cubed medium carrot
1 cubed large potato or 2 medium

Sautee:

Minced 4 cloves of garlic
Sliced 1/2 of a medium onion
Add tender beef cubes
Sautee for about 2 minutes
Add beef broth with pineapple
Add 2 Tbsp liver spread
Add 2 Tbsp tomato paste
Add 2-3 pinches of salt
Add drained and washed garbanzos
Add cubed bell pepper
Add carrots and potatoes
Optional: Add chili flakes or hot pepper if desired.

Taste to see if you may want to add more salt, sugar, or even fish sauce for extra flavor.
