Chicken & Rice: Coconut Cauliflower Chickpea Curry

Welcome to Chicken & Rice, a segment where I try new-to-me dishes and show you my favorites. The point is to try new things and have fun doing it! If you turn your nose up to anything that looks different from what you’re used to, this isn’t for you.

This dish had a subtle sweetness from the coconut milk and flakes, and a slight kick from the curry seasoning. The softened cashews added a nice textural element and it’s flavor complimented the nuttiness of the chickpeas. The cauliflower served as a carrier for the flavors, and using veggie broth bought life and depth to the rice.
