My At Home Sourdough Bread Baking Process

Since 2016, I've been making simple sourdough bread at home, and sharing it with friends and family.

Over the years, I've had lots of requests for information on how to do this, and I finally had some time on my hands to document the process, step-by-step!

I am NOT a professional baker. There are almost certainly "better" ways to do many, if not all, of the things I demonstrate here, but this is what has worked for me (most of the time!) after four years of experimenting.

This is just a basic, delicious bread, made from only three ingredients: flour, water and salt. Nothing fancy!

For a full ("big boule") recipe to cook in a Dutch oven, use:

-For the levain build:
---100g reserved starter
---200g water
---133g unbleached white flour + 67g whole wheat flour

-For the dough:
---400g activated levain (reserve the other 100g in the fridge for next time!)
---430g water with 21 to 24g of sea salt dissolved in it
---800g unbleached white flour

For the Emile Henry bread cloche, loaf baker or baguette maker, divide the recipe in half (or use the full recipe and bake half in each, as I do in the video).
