An Amazing Green Chartreuse Cocktail: Green Eyes

The Green Eyes is a fantastic variation of The Last Word cocktail created by the wonderful people at the Hunt + Alpine Club in Portland, ME. It is an excellent green chartreuse cocktail with lime juice, simple syrup and an egg white.

Green chartreuse cocktails are hard to come by, so I'm delighted to get to share this amazing last word cocktail recipe as another use for the Green Chartreuse on your shelf.

The Green Eyes was created at one of my favorite bars in the world, the Hunt + Alpine Club in Portland, ME. They were trendsetters in Portland and one of the first Cocktail bars to open in the city, which is now known the country over for their culinary and beverage scene.

0.5 oz (15 ml) Rich Simple Syrup
0.75 oz (22.5 ml) Green Chartreuse
1.5 oz (45 ml) London Dry Gin
1 Egg White
