Hope you are all continuing to stay healthy and safe! I am back with another delicious recipe-- today I am backing chewy lemon cookies with a lemon glaze! They're so simple and yummy! The perfect afternoon pick-me-up! Hope you enjoy

Ingredients for Cookies-

For the Dough-
1/2 cup salted butter softened
1/2 cup granulated sugar + an extra 2 tablespoons
1 egg
1 teaspoon vanilla
1/2 teaspoon lemon extract
zest of 1 lemon
1 teaspoon baking powder
1 1/2 cups all purpose flour

For the Glaze-
1 cup powdered sugar
1 tablespoon lemon juice
