Meat n Grain Soup | Arabic Shorba | شوربه السعودي | Arabic Staple Soup for Iftar | Food love |
One of the staple Iftar Item is Shorba, basically soup is called Shorba in Saudi Arabia. This specific shorba is made with crushed wheat and oats with mutton/lamb. It is so healthy, flavorful yet very easy to make.
Shorba:
(5 servings)
Ingredients:
Oil 2 tbsp
Mutton with bone 100 gm
Garlic 4,5 cloves
Tomato 1 big (make puree in blender)
Oats 50 gm (instant or pressed or old fashioned your choice)
Wheat crushed 100 gm
Water 1 ½ to 2 liters
Salt ¾ tsp (according to taste)
Black pepper crushed ¼ tsp
Red chili powder ½ tsp (optional)
Tomato paste 2 tbsp
Ingredients for Spice Infuser/potli of muslin cloth
Cumin 1 ½ tsp
Juniper leave 1 small (pathar ka phool in urdu; can be found in old spice markets)
Black pepper 8, 10
Coriander 1 ½ tsp
Bay leaves 2
Cloves 4
Dried lemon 1 (optional)
Dried ginger 1 small (sonth)
Cinnamon stick 1 inch piece
Method:
Put all the Spice Infuser ingredients in potli/spice infuser. If you don’t have it, don’t make the excuse, these ingredients can be added normally (no worries). Take a deep pot, fry mutton in oil for few minutes, then add whole garlic, blended tomatoes, oats, crushed wheat, salt, black and red chili powder, tomato paste and the prepared spice infuser. Add water and leave it to cook, covered on low heat for 2 hours. That’s it. Its ready to serve. Healthy, filing and full of flavors.
