Hot And Sour Noodle Soup Recipe |酸辣粉 Suan La Fen

Suan La Fen instant noodles seem to be popping up in convenience stores and supermarkets recently. But it's so easy to make at home. And when you pile on the ingredients, like the toasted peanuts, it tastes so much better.

Today we are making Suan La Fen (酸辣粉) or Hot And Sour Noodle Soup.

Ingredients:
80 g sweet potato noodles
70 g peanuts
1 Tbsp oil
1/4 tsp salt
Lettuce
Chinese parsley
Spring onion

Suan La soup base:
1 Tbsp chilli oil
2 Tbsp black vinegar
2 Tbsp soy sauce
1 clove garlic, grated or finely chopped
1/2 tsp Sichuan peppercorn powder
250 ml chicken stock
