Ingredients:
- 92g of egg beaters (or egg whites)
- Low-carb, high-fiber tortilla
- 56g of chopped bell pepper
- 168g of cooked chicken
- 28g of reduced-fat mozzarella
- Salsa for serving

Instructions:
1. Preheat a skillet over medium heat and add a little nonstick spray.
2. Pour 92g of egg beaters into the skillet.
3. Place a low-carb, high-fiber tortilla in the skillet, allowing it to cook for a few minutes with the egg whites.
4. Flip the tortilla, then add 56g of chopped bell pepper to one half.
