Garlic Confit 8 Cheese Mac N Cheese

Eight-Cheese Baked Mac & Cheese
Serves: 6-8 | Prep Time: 30 minutes | Bake Time: 20 minutes

Ingredients:

For the Pasta:
• 1 pound elbow macaroni (or cavatappi)
• 1 tablespoon salt (for pasta water)

For the Cheese Sauce:
• 4 tablespoons unsalted butter
• 4 tablespoons all-purpose flour
• 3 cups whole milk
• 1 cup heavy cream
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon smoked paprika
• 1 teaspoon Dijon mustard
• 1/2 teaspoon salt (adjust to taste)
• 1/2 teaspoon black pepper

Cheeses (Shredded or Cubed):
• 2 cups sharp cheddar
• 1 cup mild cheddar
• 1 cup Brie (rind removed, cut into small pieces)
• 1 cup mozzarella
• 1/2 cup Parmesan Reggiano
• 1 cup Monterey Jack
• 1 cup Colby Jack
• 1/2 cup Pepper Jack

For the Topping:
• 1/2 cup panko breadcrumbs
• 2 tablespoons unsalted butter (melted)
• 1/4 cup Parmesan Reggiano (grated)
• 1/2 teaspoon smoked paprika (optional)

Directions:

1. Cook the Pasta:
• Preheat your oven to 400°F (200°C).
• Boil the macaroni in a large pot of salted water until al dente. Drain, rinse with cool water, and set aside.

2. Make the Cheese Sauce:
• In a large saucepan, melt butter over medium heat. Whisk in flour to make a roux and cook for 1-2 minutes until golden.
• Gradually whisk in the milk and heavy cream, stirring constantly until the mixture thickens (about 5 minutes).
• Add garlic powder, onion powder, smoked paprika, Dijon mustard, salt, and black pepper. Stir well.
• Reduce heat to low, and begin adding cheeses: sharp cheddar, mild cheddar, Brie, mozzarella, Parmesan Reggiano, Monterey Jack, Colby Jack, and Pepper Jack. Stir until completely melted and smooth.

3. Combine:
• Toss the cooked pasta into the cheese sauce until fully coated.

4. Assemble in the Baking Dish:
• Lightly grease an 11 x 8 baking dish. Pour in the cheesy pasta mixture and spread evenly.

5. Prepare the Topping:
• In a small bowl, combine panko breadcrumbs, melted butter, Parmesan Reggiano, and smoked paprika. Sprinkle evenly over the mac and cheese.

6. Bake:
• Place the dish in the preheated oven and bake for 20 minutes, or until golden and bubbly.

7. Serve:
• Let cool for 5 minutes before serving. Pair with a crisp salad or enjoy as a decadent main dish.
