Ingredients:

15-20 pieces of dried kokum (Garcinia indica)
1 cup freshly grated coconut (or 1/2 cup desiccated coconut soaked in warm water)
1-inch piece of fresh ginger
1 green chilli (adjust according to spice preference)
2-3 cups chilled water (divided usage)
1 tablespoon cumin seeds (jeera)
Salt to taste
1/2 cup fresh coriander leaves, finely chopped
1 teaspoon sugar (optional, adjust according to kokum's tanginess)
Ice cubes for serving
For garnish: A few coriander sprigs, thin slices of green chilli, or a sprinkle of roasted cumin powder

Method:

Begin by preparing the kokum extract. Rinse the dried kokum pieces briefly under running water to remove any dust.
Place the kokum in a bowl and add 1 cup of room temperature water. Allow it to soak for 15-20 minutes until the kokum softens and the water turns a deep pink-purple color.
Once soaked, gently squeeze the kokum pieces with your hands to extract maximum flavor and color into the water. Strain the liquid and set aside. This is your kokum extract.
For the coconut milk, place the freshly grated coconut in a blender or mixer jar. If using desiccated coconut, make sure it's properly soaked and softened in warm water first.
Add the peeled and roughly chopped ginger, sliced green chilli, and cumin seeds to the blender with the coconut.
Add 1 cup of chilled water and blend on high speed for 1-2 minutes until you get a smooth paste.
Now add another 1/2-1 cup of chilled water (depending on how thick you want your sol kadhi) and blend again for a few seconds to mix well.
Strain this mixture through a fine mesh strainer or muslin cloth into a large bowl, pressing gently to extract all the coconut milk. This is your first extraction and will be thicker and richer.
For a traditional approach, you can pour another 1/2 cup of water over the coconut residue and squeeze again to extract the second, thinner milk. This two-step extraction is traditional but optional.
Now, combine the strained coconut milk with the kokum extract. The beautiful pink color will intensify.
Add salt to taste and mix well. If the kokum is very sour, you can add a teaspoon of sugar to balance the flavors.
Add finely chopped fresh coriander leaves and stir well.
Chill the sol kadhi in the refrigerator for at least 1-2 hours before serving for the best flavor experience.
When ready to serve, give it a good stir as the coconut milk tends to separate when resting.
Pour into glasses over ice cubes if desired.
Garnish with a sprig of fresh coriander, a thin slice of green chilli, or a sprinkle of roasted cumin powder for an attractive presentation.
