If you join a consultancy as a data scientist, you'll be a resource that needs to be assigned to a project and for the consultancy that's what matters. To get you on board and start billing the client.

Your career goals matter less to them than they matter to you. You have to own your career and respect your medium to long term plans. Because in a consultancy is very easy to get pushed into a role that may not be aligned with what you initially thought.

Also the fact that data science is relatively ambiguous to many hiring managers doesn't really help. When the consultancy pitches for a project they won't have the clearest picture of the initial responsibilities of the role but they will push you into the role because they still get to bill the client.
