Sweet Peas Nimona recipe explained in detail with tips… all you need is to follow the recipe 😊
A seasonal delicacy from Uttar Pradesh, this sweet peas gravy dish is simple and appealing.
It is a vegan recipe made with fresh sweet peas that can be enjoyed with rice as well as breads.
This no onion nimona recipe is one of my favorite comfort food during the winter months.

SWEET PEAS NIMONA Serves 4 to 6
Ingredients:
Fresh sweet peas (shelled) – 2 cups
Potatoes (sliced) – 2 midium
FOR THE CORIANDER PASTE
Coriander leaves – a small bunch
Tomato (sliced) – 2 medium
Ginger (sliced) – ½ inch piece
Garlic – 2 to 3 cloves
Green chili – 1
Cumin seeds – ½ tsp
Asafoetida/Hing – a large pinch
POWDERED SPICES
Kashmiri red chili pdr – ½ tsp
Coriander pdr – 1 tsp
Garam masala pdr – ½ tsp
Turmeric – a tiny pinch
Chaat masala pdr – 1 tsp
Coriander leaves(chopped) – a handful
Mustard oil – 5 tbsp
Salt – to taste
Method:
1. Reserve ¼ cup of fresh peas and mix the rest to get a coarse paste.
2. Shallow fry the potatoes in 4 tblsp of oil till lightly browned. Remove and keep aside.
3. In the same oil, add in the peas paste. Cook on low stirring continuously till the paste looks dry and crumbly. This should take about 5 minutes. Remove and keep aside.
4. FOR THE CORIANDER PASTE: Put all the ingredients in a mixer jar and grind to a smooth paste.
5. In a pan, add in a tbsp of oil and temper it with cumin seeds and asafoetida (hing). Cook briefly. Pour in the coriander paste and cook till the raw smell goes away. Lower the heat and add in the POWDERED SPICES. Cook briefly.
6. Add in the whole peas along with a bit of salt. Mix well, cover and cook for a minute. Add in the cooked peas paste. Cook stirring for a minute to combine well. Pour in 2 cups of water.
7. Break up the lumps to get a smooth gravy. Add in the fired potatoes. Season with salt. Bring this to a boil. Add more water if you want a thinner gravy. Cover and cook on low heat for 5 minutes stirring once or twice in between.
8. Remove the lid and sprinkle a handful of chopped coriander leaves. Mix well.
9. Garnish with more coriander leaves and serve hot with rice, roti or paratha.
