ROASTED GARLIC ALFREDO SAUCE - DAIRY FREE AND NUT FREE

ROASTED GARIC ALFREDO


Traditional Alfredo sauce is made from cheese, butter and heavy cream. Here the creaminess comes from cauliflower. Hard to believe it tastes so decadent.

INGREDIENTS:

24 ounces steamed cauliflower (approx. 8 cups)
¼ cup roasted garlic cloves
3 Tablespoons lemon juice
4 Tablespoons nutritional yeast
1 teaspoon Benson’s Table Tasty (or your favorite salt-free seasoning)
10 ounces chopped onion
10 ounces sliced mushrooms
1½ pounds spiralized zucchini or spiralized butternut squash


PREPARATION:


In a high-powered blender, blend the cooked cauliflower, roasted garlic cloves, lemon juice, nutritional yeast and Benson’s Table Tasty until smooth and creamy. Set aside. In a large sauté pan, water sauté onion until caramelized and brown. Add mushrooms and cook until nicely browned. Add zucchini and cook for a minute or two until al dente. Add the sauce and stir until hot. Garnish with fresh parsley or arugula.


CHEF’S NOTE:

If you eat pasta, this sauce would be excellent on it. It’s also delicious on a baked potato.

Roasting the garlic imparts a smooth, mellow flavor in this creamy, dairy and nut-free Alfredo sauce. Here we serve it over a gluten free bean pasta and spiralized butternut squash noodles.

I am using the Pampered Chef large sauce skillet. If you are not comfortable using a non-stick pan, buy the biggest and best pan you can afford. Many people like using a ceramic pan, green pan, Scan Pan, Copper Chef, waterless cookware or good old stainless steel. Cast iron and aluminum is not recommended. Whatever pan you select, you never need to use oil to saute.
