Ingredients:
1kg pork belly (large cubes)
500g onions (small dice)
150g garlic (minced)
500ml lechon sauce
Oil for saute
1/2 cup white vinegar
3pcs bay leaves
Cornstarch as needed
Fish sauce as needed
Brown sugar as needed
Ground black pepper as needed
Oil for deep frying
Procedure:
1. Cut the pork into large cubes. Season with fish sauce.
2. In a vessel of your choice. heat up enough oil for deep frying the pork.
3. Deep fry the pork until the meat is brown and the skin is crispy. Retrieve and set aside.
4. In a normal pot or pressure cooker, saute garlic with chicken oil or any oil of your choice until light brown.
5. Add onions and cook until slightly browned.
6. Add the meat back in, with enough water to submerge the meat, then add your lechon sauce, patis, var, bay leaves, black pepper, and brown sugar. Bring to a boil and simmer until tender or cook under pressure for 20 minutes.
7. Reduce the sauce if needed then thicken with cornstarch diluted in water.
8. Adjust seasoning if needed.
TIP:
1. Add maybe 1-2 tbsp of vinegar off fire. Stir well. It brightens up the dish.
2. Serve with fresh onions and vegetables. it cuts through the richness of the pork belly.
