Crispy & Sweet: The Perfect Balusha Recipe | A Delightful Indian Sweet Treat | ಗರಿಗರಿಯಾದ ಕರ್ನಾಟಕ ಸ್ಪೆಷಲ್ ಬಾಲೂಶ

Ingredients
For the Dough:

All-purpose flour (maida): 2 cups
Sugar: 1 teaspoon
Baking powder: 1/2 teaspoon
Ghee: 1/4 cup
Yogurt: 1/4 cup
Water: as needed
For the Sugar Syrup:

Sugar: 1 1/2 cups
Water: 1/2 cup
Cardamom powder: 1/2 teaspoon
Instructions
Prepare the Dough:

In a large mixing bowl, combine the all-purpose flour, sugar, and baking powder.
Add ghee and mix well until the mixture holds shape when pressed.
Add yogurt and mix, adding water as needed to form a smooth dough. Do not knead the dough; just combine it gently.
Cover and let the dough rest for 15 minutes.

Make the Sugar Syrup:

In a saucepan, combine sugar and water, and bring it to a boil.
Let it boil for about 5 minutes, then add the cardamom powder.
Turn off the heat; the syrup should be warm when dipping the balushaas.

Shape and Fry the Balushaas:

After the dough has rested, take small portions and shape them into small balls.
Press gently in the center of each ball to make a small dent.
Heat oil in a pan over medium flame, and deep fry the balushaas until golden and crisp, flipping to fry both sides evenly.

Dip in Sugar Syrup:

Remove the balushaas from the oil, then dip them into the warm sugar syrup.
Allow each side to soak for about 5 minutes, then remove.

Serve:

Enjoy your balushaas warm or let them cool to enjoy later!
