달콤한 고구마 케이크 : Sweet Potato Cake | Honeykki 꿀키

오늘은 고구마 케이크를 만드는 방법을 보여드릴게요.
생크림으로 아이싱을 한 후 제누와즈 가루를 겉에 뿌려 만들어 봤어요.
이 케이크는 저희 어머니가 좋아하는 케이크입니다. 촉촉하고, 부드럽고, 달달하고 정말 맛있어요!

Today I’ll show you how to make Korean Sweet Potato cake.
Generally, sweet potato cake is iced with whipped cream and coated with powdered genoise.
Sweet potato cake is my mom’s favorite cake! So moist, soft and sweet!

* Ingredients
제누와즈(18cm)

계란 3개, 설탕 120g, 박력분 100g, 버터 30g, 우유 30g, 바닐라 익스트랙

고구마필링
고구마 5~6개 정도(700g), 생크림 100ml, 우유 100ml, 설탕 35g, 버터 35g

휘핑크림
생크림 또는 휘핑크림 350ml, 설탕 30g

설탕 시럽
설탕과 물을 1:2로 끓여 사용합니다.

3 eggs, 120g sugar (50g yolk / 70g white), 100g cake flour
30g butter, 30g milk, vanilla extract

sweet potato filling
5~6 cooked sweet potatoes(700g), 100ml heavy cream, 100g milk, 35g sugar, 35g butter

Whipped cream for frosting
350ml whipping cream, sugar 30g

Sugar syrup
Boil 1 part sugar in 2 parts water

* Recipe
Sweet potato filling
1. 냄비에 고구마를 넣고 부드럽게 될 때까지 삶아줍니다.
1. In a pot, cook sweet potatoes until potatoes are completely soft.

2. 삶은 고구마의 껍질를 벗기고, 으깨줍니다.
2. Peel and mash while they are hot!

3. 냄비에 우유, 생크림, 설탕, 버터를 넣고 버터가 녹을 때까지 끓여줍니다.
3. In a pot, add milk, heavy cream, sugar and butter. Boil until butter melts.

4. 버터가 다 녹으면 으깬 고구마를 넣고 잘 섞어줍니다.
4. Add mashed sweet potatoes and mix well.

좀 더 부드러운 식감을 원한다면, 핸드믹서를 이용해 갈아주거나, 체에 걸러주세요.
If you want it smoother, blend using hand mixer or sift.

Whipping cream for frosting
큰 그릇에 생크림, 설탕을 넣고 단단하게 휘핑해줍니다.
In a large bowl, whip the whipping cream and sugar.

Assembly
1. 제누와즈를 3단으로 나누어 잘라줍니다.
1. Cut the genoise into 3 layers.

2. 자른 제누와즈 위에 시럽을 바르고, 고구마를 올려줍니다. 한번 더 반복해주세요.
2. Brush the syrup, spread sweet potato filling and repeat!

3. 겉에 생크림을 발라 매끄럽게 아이싱해줍니다.
3. Ice the cake with whipped cream.

4. 사용하고 남은 제누와즈를 가루를 낸 후, 케익위에 뿌려 완성합니다.
4. Coated with powdered genoise. done!
