Ingredients:

1 cup of sago (tapioca pearls)

1 cup grated cheese (cheddar or mozzarella works well)

2-3 tablespoons all-purpose flour (for binding)

1-2 green chilies (finely chopped, optional for spice)

1 teaspoon black pepper powder

Salt to taste

Oil for frying

Fresh coriander or herbs (optional)
Instructions:

1. Soak the sago: Rinse the sago under water and then soak it in water for 3-4 hours or overnight, until it softens and becomes translucent. Drain off excess water if needed.
2. Prepare the mixture: In a mixing bowl, combine the soaked sago, grated cheese, chopped green chilies, black pepper, salt, and fresh coriander or herbs (if using). Mix thoroughly. If the mixture feels too wet, add a few tablespoons of flour to bind it together.
3. Shape the balls: Take small portions of the mixture and roll them into bite-sized balls.
4. Heat the oil: In a deep frying pan, heat oil on medium-high heat.
5. Fry the balls: Fry the cheese sago balls in batches, turning occasionally, until they are golden brown and crispy on all sides. This should take about 3-5 minutes per batch.
6. Drain and serve: Remove the balls from the oil using a slotted spoon and drain on a paper towel. Serve hot with your favorite dipping sauce like ketchup or a tangy chutney.
