Making HOT Horseradish
If you are a horseradish lover, there is nothing like fresh made horseradish. It keeps very well in the freezer, so make plenty to last until you can harvest more. The trick to the hotness is harvesting after a hard frost, and then waiting three minutes after blending before adding the vinegar. Vinegar stops the enzymatic action in the blended horseradish and stabilizes the degree of hotness. If hotness is not your thing, you can add the vinegar without waiting three minutes.
We love using our Blendtec blender, and double the recipe for each batch we make. Adjust to the amount that works best in your blender.
Recipe
1 cup horseradish, washed, peeled and chopped
1/3 cup water
1/3 cup vinegar
1 tsp salt
Blend horseradish for 30 seconds. Scrape down, and blend for 30 more seconds. Let sit three minutes. Add water, vinegar and salt. Blend until smooth, stopping to scrape sides down if necessary. Put in small jars, leaving 1/2 inch head space. Store in freezer until ready to use.
We make this in our garage because of the fumes. Caution: never look into the jar of blended horseradish - it will burn your eyes! Always point the jar away from your face. Get some roots ordered to plant this spring for fall harvest, or plant in the fall.
It grows like a weed, so be careful where you plant it. If you are not careful it can overtake a garden space.
