Diving Alaska Discovering Scallops & King Crab
First time Diving in Alaska Tj & Jan discover Pugent Sound King Crab. The crab is endangered and protected in Washington and is a subspecies of the more well known King Crab. In Alaska the crabs are considered invasive and have no regulations. By choice we preferred to leave the females as they were molting (soft shelled) and with eggs. Although these are considered invasive to Alaska we don't mind if they take up residence here and reproduce. These crabs are very tasty. Possibly the best crab we have had. Its Sweet, firm, and succulent.

Best way to Cook Your Crabs
(Thanks to local Kyle Worman with Worman Sportfishing in Ketchikan)
Recommendations:
1). Steam your crabs do not boil. This keeps crab meat firm and sweet without retaining a soggy or overly wet texture.
2). Cool your crabs immediately if possible. Cooling your crabs directly after they have cooked will prevent over cooking the meat. If you have ever had your crab meat stick to the inside of the shell and not come out easily. It has been cooked too long. Also cooling the crabs will harden the shell so it will crack easier as well as release the meat from the shell.
Recipe:
Salt water thoroughly. Add a lot of salt. Easily a 1/4 to a 1/2 of a cup of salt depending on the size of your pot. If you have access to clean ocean water that can be used as well. In that case you don't have to add any salt.
Bring 2-3 inches of water to boil in a large pot.
Add cleaned crabs (no guts in crabs) to pot. Cover pot. Bring water back to a boil.
Once brought to a boil set timer for 13 minutes.
After 13 minutes remove crab immediately from heat.
Rinse with cold water, poor over ice, and enjoy!
A quick Ice bath works well here too.
