Tasty healthy, millet based ukad recipe

INGREDIENTS:
Nachni / ragi Flour – 1 cup
Rice Flour – ¼ cup
Asafoetida Powder – 1 teaspoon
Salt – as needed
Curd – ¼ cup
Water – as needed
Ghee – 2 tablespoons
Mustard seeds – 1 teaspoon
Jeera – 1 teaspoon
Green chilli – 1 tablespoon
Curry leaves – 1 stringful
Coriander leaves - handful

RECIPE:
1. In mixing bowl, take nachni flour, rice flour, salt and curd. Add water gradually to make a smooth lump free thin batter.
2. Heat ghee and splutter mustard and jeera seeds. Add green chilly, asafoetida powder and curry leaves. Saute for a minute and add the batter.
3. Keep stirring until non sticky glossy soft dough like mass forms.
4. To check the consistency, drop a quarter spoon of the ukad in water. If its non sticky and floats the ukad is cooked perfectly.
5. Garnish with coriander leaves and serve hot.
