Házi abárolt szalonna - (Paprika Bacon)
Serves: 8 - 10 guests
Ingredients:
1½ lbs. Manglica Pork Belly, slab (Berkshire is a good substitution)
1 head Garlic, whole / peeled
2 Tbsp. Redmond Real Salt
1½ tsp. Peppercorns, whole
1 Onion, peeled / cut in quarters
1 head Garlic, processed into a paste
Procedure:
1. Place pork in a pot with 1 gallon of water, onion, garlic, sea salt & peppercorns.
2. Bring to a boil then reduce to a simmer. Cook on low heat for 2 hours.
3. Remove and cool. Rub the garlic paste generously on the fat side of the belly.
4. Then pack the paprika on top of the garlic paste. Wrap with parchment paper and place in the refrigerator for 24 hours.
5. Slice ½" thick and serve with bread, Hungarian wax peppers, onion, tomato, cucumber.
