Loaded Queso
Smoked Queso
-1 lb Sausage
-16 oz block Velveeta
-2 cups shredded Colby Jack Cheese
-1/2 onion, diced
-1 can Rotel
-1 small can Green Chilies
-8 oz cream cheese
-Cilantro
-Milk, if needed.
Brown sausage. Drain. Add all ingredients into tin pan or baking dish. If you are not smoking in a smoker, add 3-4 drops liquid smoke. Smoke 2 hours at 225 degrees, stirring occasionally. **OR** Bake at 300 degrees for 30 minutes - 1 hour. Serve warm!

Corn Dip
Ingredients:
2 cans white shoepeg corn
1 block cream cheese
1-2 tbsp pickled diced jalapenos
sprinkle of cumin

Directions:
Soften cream cheese (covered) in microwavable bowl for 1 minute. Drain and add 2 cans of corn, jalapenos, and cumin, Microwave 2-5 minutes until warmed through. Serve with tortilla chips.

Coconut Shrimp
1/4 cup all purpose flour
1 tsp salt, divided
1/2 tsp black pepper, divided
1/2 garlic powder, divided
1/2 tsp paprika, divided
2 large eggs, beaten
1/4 panko breadcrumbs
1/2 cup unsweetened coconut flakes
1/2 pound large shrimp, peeled and deveined (Tails left on!)
Nonstick cooking spray
Mix together the flour and half of the seasonings and spices in one bowl. Whisk the eggs in separate bowl. Combine the panko breadcrumbs , coconut, and the other half of the seasonings and spices in additional bowl.
Coat each shrimp in flour, then egg, then panko/coconut. Set aside.
Place shrimp in air fryer and spray lightly with cooking spray. Cook at 350 degrees for 8 minutes, flipping half way through. Serve with dipping sauce! (recipe below)

Sweet & Spicy Dipping Sauce
2 tbsp apricot spread
1/4 cup sweet chili sauce
Mix together and enjoy!
