CANNING SALSA STEP BY STEP-easy no water bath

This is definitely the easiest salsa to can. This very old recipe does not require a water bath but if you would feel safer you may do one for 10 minutes.

16 cups chopped tomatoes
1 bunch of cilantro
7 jalapeños
4-5 chopped onions
2 1/4 lime juice or vinegar
1/2 cup of sugar-optional
1/3 cup of salt - or to taste
2 tablespoons garlic
2 teaspoons black pepper
1 teaspoon of alum

Mix all together and boil 1 hour. Put in hot jars.
