✅ This summer radish kimchi, kkakdugi, turned out amazing!

✅ Ingredients
You’ll need: 2.2kg radish, salt, sugar substitute, 1 green onion.
For the sauce: 1 apple, 1 onion, garlic, ginger, fish sauce, salted shrimp, plum syrup.
Also, make a rice paste with water and sweet rice flour.

✅ Salting the Radish
Cut the radish into big cubes.
Add 2 tbsp salt and 0.5 tbsp sugar substitute.
Let it sit for 1 hour, flipping halfway.

✅ Making Rice Paste
Mix 200ml water + 2 tbsp sweet rice flour.
Cook on low heat until thick and glossy. Let it cool.

✅ Making the Sauce
Blend apple, onion, garlic, ginger, sauces and syrup.
Mix it with the rice paste and red pepper flakes.

✅ Mixing Everything
Drain the radish. Add green onion and sauce.
Mix thoroughly and pack into containers.

✅ Ferment & Done
Leave at room temp for 1 day, then refrigerate.
Ready to eat in 3 days—perfect with rice or ramen!
