#easyrecipe no-3 baigan curry/വഴുതനങ്ങ കറി#viral

Description: A simple and flavorful Brinjal Masala Curry made with fresh eggplant, onions, tomatoes, and aromatic spices. This easy homemade curry pairs perfectly with rice, chapati, or roti.

Ingredients:
Brinjal (Eggplant) – 500 g
Onion – 1
Tomato – 1
Ginger-garlic paste – 2 tsp
Oil – as needed
Spice Mix:
Salt – to taste
Chilli powder – 2 tbsp
Coriander powder – 1 tbsp
Turmeric powder – ½ tsp
Garam masala – 1 tsp
Method:
Heat oil in a pan. Add chopped onion and sauté until soft. Add the ginger-garlic paste and cook until the raw smell disappears. Add the chopped tomato and cook until it becomes soft.
Mix the salt, chilli powder, coriander powder, turmeric powder, and garam masala in a small bowl. Add this spice mix to the pan and sauté for a minute.
Add the chopped brinjal and mix well so that it is coated with the masala. Pour in the required amount of water and cook until the brinjal becomes soft and the curry is well cooked.
Garnish with fresh coriander leaves if desired and serve hot with rice or chapati. 🍆✨
