recipe:

ingredients:

300gm ground beef
salt to taste
½ onion, sliced
3 scallions (whites for cooking, greens for garnish)
1 lb well-fermented kimchi
¼ cup kimchi juice
2 cups water
½ container soft tofu

seasonings:

2 tbsp gochujang
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp gochugaru flakes
3 cloves garlic, grated

method:
1. prep and slice onion, scallions, and kimchi. set aside the kimchi juice.
2. combine the sauce ingredients in a bowl.
3. in a large pot, cook the ground beef on medium heat until browned. season lightly with salt.
4. add the kimchi with its juice and sauté with the beef for a couple minutes. add onions and scallion whites and cook until the onions soften slightly.
5. add the seasonings, mix well, and add water. bring to a simmer and cook for 10–15 minutes.
6. add soft tofu in large chunks, cover, and simmer for a few more minutes.
7. garnish with scallion greens and serve hot with rice 🍚
