Three Rivers Pantry Challenge | Creative Recipes

We are doing the Three Rivers Pantry Challenge and I thought I would share some creative ways we are using up some leftover cereal that's been sitting in our pantry awhile. We also attempt to make hoagie buns to go along with the meatballs we are having for supper. With those meatball hoagies we will be having some of the sweet potatoes that we froze this past fall.
These recipes all turned out delicous! I hope this will give you some inspiration for using up some items you might have sitting in your pantry.

Hoagie Rolls
3 1/2 - 4 cups bread flour
1 1/4 cups plus 2 tbsp - 1 1/2 cups warm water
2 tbsp sugar
1 packet instant yeats (2 1/4 tsp dry active yeast)
1 tsp kosher salt
4 tbsp cold butter cubed

Instructions
Using Active Dry Yeast? Start here
If using Active Dry Yeast (not the Instant I use) you have to proof the yeast first. Add the Active Dry Yeast, sugar and 1/4 cup plus 2 Tablespoon of warm water in a bowl of a stand mixer.
Using a whisk or spoon, mix and set aside for 5-10 minutes or until the yeast has bubbled quite a bit.
In the bowl of a stand mixer fitted with the dough hook (this would be the same bowl your yeast mixture is in) add in 2 cups of flour and remaining cup of water. Start off on low. Mix for 4 minutes.

Using Instant Yeast? Start here
In the bowl of a stand mixer fitted with the dough hook add in 2 cups of flour, water, sugar, and Instant Yeast. Start off on low. Mix for 4 minutes.
Go to Step 1 of Recipe Continuation and follow the rest of the recipe.
Recipe Continuation
Add in the salt and 1 cup at a time of the remaining flour and mix for 5-6 minutes until the dough is slack (See note). At this point, your mixer should be at medium speed. If your dough, after 5-6 minutes is not slack add in the remaining 1/3 cup of water 1 Tablespoon at a time. The additional water will fully depend on how humid your room is.
Add in the butter 1 Tablespoon at a time and mix until almost fully melded in before adding the next Tablespoon. In total, mix for 1-3 minutes or until the dough comes back together and the dough until it pulls completely away from the side and is smooth and shiny. Remove from bowl and transfer to a greased, covered bowl until doubled in size. ~1 hour.
Punch the dough down and place on a very lightly floured board. Divide into 4-8 pieces and shape. I would advise using as little flour as possible when shaping these. The more flour you add, the tougher the hoagies will be. Transfer to a parchment lined tray and cover with lightly sprayed plastic wrap. Allow to rise again until almost doubled. ~30-45 minutes. Do NOT overproof them otherwise they will fall flat.
Preheat oven to 375 F. If you want to slash your bread, using a lame, make your slashes. If desired, brush with coating of choice and bake for 16-23 minutes or until golden brown. To ensure doneness, test the internal bread temp. It should be at 200F.
Allow to cool before cutting with a quality bread knife

Corn Flake Peanut Butter Balls
1 cup corn syrup
1 cup powdered sugar
1 cup peanut butter
1 tsp vanilla
4 cups Corn Flakes cereal

INSTRUCTIONS
Stir together corn syrup and sugar in a large saucepan. Bring to a boil, stirring constantly.
Remove from heat and add peanut butter and vanilla. Stir till smooth. Stir in cereal.
Drop by spoonfuls on silicone mats or waxed paper. Cool slightly and roll into balls.

Minion Treats
6 Tbsp. unsalted butter
3 cups Rice Krispies cereal
3 cups Lucky Charms cereal
1 10 oz. bag marshmallows, plus 3 cups of marshmallows mini or regular size will work

Instructions
Line a 13 x 9 inch baking pan with parchment paper and lightly coat with nonstick cooking spray.
In a large pot over low heat, melt the butter. Once the butter has melted, stir in the marshmallows and stir constantly until melted. Be sure not to let the marshmallows brown, they will burn quickly.
Once the marshmallows are melted remove from heat and stir in the cereal until evenly coated.
Pour the mixture into the prepared pan and press evenly (coat a spatula with nonstick cooking spray on both sides or coat your hands so the mixture doesn't stick). Add Lucky Charms marshmallows to the tops of the treats (optional). Allow to cool for a few minutes and slice into bars.
