Salmon Croquettes

Here is BASIC rule of thumb, per each one can of Salmon, you need:
1 egg
1 sleeve of finely crushed saltine crackers.
If you are making 2-3 cans sometimes you will need an additional egg, depending on what size eggs you have.

Do NOT drain the "juice" from your can.

The best way to mix it all up is with your hands! I used gloves in the video to be polite, but normally I just get in there with clean hands and mix away LOL!

NOTE* You will want your mixture slightly on the moist side so that the croquettes will hold together while frying.

You may wish to clean up the salmon skin while flaking up the salmon. You can remove the bigger bones if you want or just crush them up. The bones are not hard. You of course may if you wish, purchase the more $$$ expensive skinless boneless fillets.

No need for extra salt as the crackers have salt already. Of course if you are using unsalted tops crackers, then I would probably add in ½ teaspoon of salt per can.

Many people overkill Salmon Croquettes when there is no need to by trying to be overly "fancy" and adding far too many unnecessary ingredients. A bit of green onion (or Vidalia) and a little red/green bell pepper go a long way as to dress them up for special occasions. But this particular recipe is for a BASIC kid friendly croquette.

Some additions absolutely compliment the already great basic croquette, Some recipes I have seen so many ingredients in what is supposed to be a simple croquette, it was just overkill, I feel they just wanted to be all “La ti da” and over complicated for no real reason LOL! As I stated some additional ingredients are great to kick it up a notch and I will list some additional “fancy it up” optional ingredients down below.
Optional Ingredients: NOTE* the amounts are PER CAN

fresh dried parsley (to your taste)
1/8-1/4 teaspoon garlic powder
1-2 Tablespoons of finely minced green onion, or Vidalia onion (according to your taste).
1-2 tablespoons minced bell pepper
2-3 teaspoons lemon juice
red pepper flakes to taste
cayenne pepper to taste
pepper to taste

Again remember, the main rule of thumb, you do not want to overpower the croquette, a little goes a long way. If you are tweaking the recipe with the above (or your own preferred) ingredients always just make a small "sample" croquette so you may adjust the seasonings according to your taste. Remember, you can put it in, but you can't take it out. If experimenting, have extra salmon, eggs and crackers on hand so you can tone it down if you found you overdid it. LOL!

NOTE* You must be careful when adding too many additional ingredients, as they can overpower the croquette.

Serve with tartar sauce or ketchup, or again “fancy it up” by making a mayonnaise dill dressing sauce using mayonnaise, sour cream, Dijon mustard, prepared horseradish, finely chopped onion, dill, lemon juice, the slightest hint of garlic, salt and pepper to taste.

These are GREAT cold straight out of the fridge the next day!! VERY kid friendly ans they love it served with ketchup!

Great side dishes would be:
Macaroni and cheese
Baked beans
Pork n beans
Salad
Steamed vegetables
