Milk Bread w/Sweet Custard (Pandan, Ube, and Coconut)

Hello and welcome to my channel. This video is on how to make sweet pandan, ube, and coconut custard from scratch for use in milk bread (you can also use it as a dip for bread). If you have seen my other video, this is the same sweet milk bread recipe. You’ll love these custard-trust me!

Updated 6/2020:

***if you find that your dough is too wet, add up to 2 TB flour. Different brands of flour may result in a bit different consistency.

**microwave heavy cream and milk if cold for 40-50 seconds NOT MINUTES (sorry).

Ingredients:

PANDAN CUSTARD
3 egg yolk (medium or large)
1 cup coconut milk
1/3 cup granulated sugar
1 Tbsp corn starch
1 tsp Pandan Paste

UBE CUSTARD
3 egg yolk (medium or large)
1 cup coconut milk
1/3 cup granulated sugar
1 Tbsp corn starch
1/2 tsp Ube Paste

COCONUT CUSTARD
3 egg yolk (medium or large)
1 cup coconut milk
1/3 cup granulated sugar
1 Tbsp corn starch
1 TB coconut essence or extract

DOUGH
2/3 cup heavy whipping cream
1 cup plus 1 Tbsp whole milk
1 egg
1 Tbsp Instant yeast
1/2 cup sugar +1Tbsp
4 cups bread flour
1 teaspoon salt

GLAZE COAT
1 egg white
1 Tbsp cold water

Bake at 330 degree F for 16-20 minutes or longer depending on how you shape and size your dough.

Serving size: 24-30 bread more or less dependent on how you shape your dough

Time for first proof (bulk) may be shorter if your working in a warm environment. Make sure dough size is double.
Avoid proofing for more than 2 hours as it may compromise the balance of flavor and texture of your dough.

Each custard makes enough for one batch of this bread recipe.
The bread recipe makes enough to fit 1-2 9 x13 inch pan, but that will also depend on how you shape your dough.

I am using a stand mixer for this recipe. Highly recommend using a stand mixer, but you can always knead by hand. Time to knead dough will need to be double or maybe even longer. Kneading the dough is an important step to get a soft and elastic texture to the bread. Hope this helps for those that are wondering.
