Dad Dates | Baking with Mat Riley | NomadiDaddy

Welcome back to the second instalment of our #DadDates series. Every month I will be hanging out with a dad friend of mine to learn a little bit about what they do... in addition to being a parent.

This week I had the pleasure of baking with Mat Riley. Mat is well known for baking after his appearance on "The Great British Bake Off" in 2015 and after trying out one of his recipes, I can see why he did so well.

We made some chocolate and hazelnut brownies which we then took to the climbing wall. (We needed to burn off the calories...) You'll see why when you check out the recipe below:

Ingredients:

200g Good quality milk chocolate,
110g Good quality dark chocolate,
250g Unsalted butter.
300g Golden caster sugar,
4 Eggs
70g Plain flour,
60g Cocoa powder,
100g Chopped hazelnuts

Method:

In a pan melt together the butter and chocolate.
Whilst that is melting, gently mix together the eggs and sugar.
Allow the butter and chocolate to cool slightly then combine with the eggs and sugar. Then add the flour.
Once smooth, add the hazelnuts and pour into a lined baking tray.
Bake at 140°C (Fan Oven) for 40-50 mins
