So you can only imagine how much you'll LOVE these eggless carrot cake cinnamon rolls with homemade mascarpone icing.

Made with simple, inexpensive ingredients, these are perfect to bake for a late Sunday breakfast. You can even skip the icing if you wish, the rolls taste delicious with a simple dusting of powdered sugar on top!

These rolls freeze beautifully so we usually make a big batch, put the rolls right after slicing them into a food safe ziplock and freeze them. We pop them straight from the freezer into the oven and have fresh baked cinnamon rolls any time we want! Oh, the smell of them just fills the house with joy!

Ingredients:

(A kitchen scale is a quick and precise way to weigh ingredients and it's inexpensive too. We use this one and its under 300 INR:

 For the Dough:

1. 300 ml/ 1 1/2 cup lukewarm milk (dip your finger in, it should only feel warm not hot
2. 115 gm/ 1/2 cup caster sugar
3. 120 ml / 1/2 cup canola oil
4. 1 tsp vanilla extract
5. 512 gm / 4 cup plain flour
6. 2 tsp instant yeast (2 1/4 tsp if using active dry yeast)
7. 1 tsp cinnamon powder
8. 1/2 tsp nutmeg powder
9. 100 gm / 1 cup grated carrots (we used the delicious red winter carrots that are available in our local market, you can use any variety you like)

after the dough has risen:

10. 65 gm (1/2 cup) plain flour plus extra for kneading and rolling the dough
11. 1/2 tsp baking powder
12. 1/2 tsp baking soda
13. 1/2 tsp salt

For the Filling:

1. 113 gm / 1/2 cup very soft butter
2. 200 gm / 1 cup brown sugar
3. 1 tsp cinnamon powder
4. 1/2 tsp nutmeg powder

For the Mascarpone Icing:

1. 125 gm / 1 cup powdered sugar
2. 75 gm / 1/3 cup homemade mascarpone cheese (recipe video link provided above)
3. 60 gm / 4 tbsp soft butter
4. 1 tsp vanilla extract
5. 2-3 tbsp milk

If not using the icing, powdered sugar may be used for dusting the rolls.
