Spring has finally arrived properly here in Malmö and I bring you along for an outdoors-y what I eat in a day in Malmö. I share quick and easy meals with few ingredients that are perfect for relaxed spring and summer cooking. I hope you enjoy! x

R E C I P E S
🌿 Overnight Oats (serves 2)
1 cup oats
A small handful of raisins
2 tbsp milled flaxseed
1,25 cup oat milk or other plant milk
0,5 tsp cinnamon or cardamom, optional
- Mix together well in an airtight container and refrigerate over night. Top with fresh fruit, berries or compote, seeds or whatever else you fancy.
🌿 Green Stir Fry (serves 2)
2 servings of soba noodles or other noodles of choice
1 hot chili pepper, or to taste, finely chopped or sliced
3 garlic cloves, minced
1 medium broccoli crown, cut into small-ish florets
1,5 cup frozen or fresh green beans
1 cup frozen shelled edamame beans
3 tbsp healthy boy vegetarian mushroom sauce
Salt or soy sauce, to taste
.- Cook noodles according to package instructions. Sauté chili and garlic in a little oil over medium heat for a minute. Add broccoli and stir fry for about 3 minutes, until it starts to lightly soften and go a vibrant green. Add green beans and edamame and continue stir frying for about another 2-3 minutes or until veggies are cooked but still has a nice bite. Take off the heat and stir the sauce through the veggies. Toss with the noodles and serve.
